Celebrity Chef speaker Tom Colicchio taught himself to cook with Jacques Pepin’s legendary illustrated manuals on French cooking, La Technique and la Methode. At 17, he made his first kitchen debut in his hometown of Elizabeth at Evelyn’s Seafood Restaurant. Then, he cooked at New York restaurants such as The Quilted Giraffe, Gotham Bar & Grill, Rakel and Mondrian. He has been selected by the Food & Wine magazine as one of the top ten Best New Chef’s in the U.S. while working for Mondrian and The New York Times awarded Mondrian three stars.
In 1994, Tom Colicchio and his partner, Danny Meyer, opened Gramercy Tavern in Manhattan’s Gramercy Park neighborhood. Ruth Reichl of The New York Times awarded Gramercy Tavern three stars and noted, Tom was “cooking with extraordinary confidence, creating dishes characterized by bold flavors and unusual harmonies.” He was also awarded The James Beard Foundation Award for Best Chef-New York in 2000. A year later, Tom opened Craft and Craftbar which noted very high praise. Then, he opened Craftsteak at the MGM Grand in Las Vegas in 2002. Next, was ‘wichcraft, a sandwich shop based off of Craft. Today, ‘wichcraft has 14 New York City locations, as well as locations at MGM Grand in Las Vegas and the Westfield Center in San Francisco.
Crafsteak New York and Craft Dallas were the next to open in 2006, Craft Los Angeles in 2007 and Craftsteak at the MGM at Foxwoods and Craft in Atlanta. Tom Colicchio does consulting work at Liberty National Golf Club in New Jersey, Kiawah Island Club in South Carolina and Doonbeg Golf Club in Ireland. In 2010, Tom opened Colicchio & Sons in New York where he experiments with ingredients and uses family farmers ingredients. He has been awarded The James Beard Foundation’s Outstanding Chef award and is available for cooking demonstrations, hosting and corporate appearances.
